Joey Altman began training to be a chef at the age of 16. After training under many esteemed chefs around the world including Chef Emeril Lagasse, he gained prominence as the opening chef at Miss Pearl’s Jam House in San Francisco, where he received many stars for his tropical dishes inspired by Caribbean, Cajun, Creole and Pacific Rim cuisine. Altman graduated with a degree in hotel and restaurant management from a community college in New York. He then traveled to France to train under Chef Bernard Constantin of the Hotel Larivoire and moved on to Boston, where he worked for Chef Bob Kincaide at the Harvest restaurant in Cambridge. By 1985, he was living in New Orleans and working with Emeril Lagasse at Commander’s Palace. Altman now works as a restaurant and specialty foods consultant, with clients ranging from start ups to chain restaurants. He has hosted multiple television food shows, including “Appetite for Adventure” and “Tasting Napa” on Food Network, and “What’s Cooking with Joey Altman” on the Shop at Home Network.
